I chuckle everytime I think about Chef Dean Fearing’s tongue in cheek description of one of his spot-on delicious, new finishing sauces: Called “D1“. “It’s better than A1!” quips the legendary father of Southwestern Cuisine as he glazes a pan roasted chicken breast with the sauce (it and a campanion line of finishing sauces are available at all Central Market locations in Texas and through the Fearing’s website). It’s a comparison that might be applied to the cuisine created by the famous and affable chef: flavors better than the standard brands; with high quality food that appeals to a wide variety of tastes without becoming mainstream mediocre. Dean is riding high into his 12th year of operation of namesake Fearing’s in the plush Ritz-Carlton Hotel in Dallas, and is sanguine about his legacy from the Mansion on Turtle Creek years, and those heady “Gang of Five” days in the 80’s when he, Robert Del Grande, Stephan Pyles, Anne Lindsey Greer (Anne McCann), and Avner Samuel banded together to rustle up some larrapin Southwestern style grub.
