It’s Christmas and the perfect time to be talking about culinary art! Kate Naumann brings elegant and tasty French pastries to the Durango community. She opened her shop a year ago at 3101 North Main Avenue. Using European techniques to create delicious pastries such as opera cakes, tartines, eclairs, croissant, chocolate peppermint cream puffs to name a few as well as empanadas with southwest flavors. Kate’s ingredients are local and fresh, working closely with farmers and ranchers in the area. She sources mushrooms from Leaf Cutter Farms, honey from Honeyville and wheat from Mountain Mama Milling in addition to many other local businesses. Through experimentation and creativity using local and seasonal flavors Kate likes to push the boundaries of what a pastry is. Working with other community businesses is important to her and she supplies James ranch with bread for hoagies and focaccia while also donating items to the Grub Hub soup kitchen at Fort Lewis College. Much of Kate’s training comes from nine years as a baker then manager at Serious Delights in the Nature’s Oasis store in Durango. Through workshops at the San Francisco Baking Institute she’s been able to learn more about her craft. La Bonne is located next to 81301 Coffee House and Roasters where you can find a seat and bring your pastry when you order your coffee. Take and bake items are also an option.
